I'm afraid I did not get clear your last question. If you can post a picture of the thermocouple, it might help to understand it better.

P.S. Possible that this problem has nothing to do with the oven thermostat. The problem can be a bad gas valve sensing bulb or a bad pilot. If you have a long lighter, try to heat up the gas valve sensing bulb. Make sure the pilot light is on.
