i was wondering if it is as simple as it looks to replace this element which appears to only have 2screws securing it and unplug from unit is that all it takes?

Yeah but first make sure the oven in unplugged or at least have the breaker turned off if its built in and u cant get to the plug easily. after the two screws are removed it will pull right out along with two wires that are attached.. sometimes the wires burn off which can be a pain if they fall back inside the wall but hopefully they are not burned. replacing the element is very easy
